Langostino Omelette

Single Omelette

Cook time 15 min

 

Ingredients:

 

2 tbsp organic virgin olive oil

3 whole organic eggs

5 sliced mushrooms

1/4 cup premuim walnuts

1/2 diced small yellow or red onion

1/4 cup shredded cheddar cheese

2 tbsp salt and pepper

2 tbsp granulated garlic

3 oz Langostino tails

 

 

Directions:

 

Use your cutting board and a sharp knife to slice the mushrooms, and dice the onion. In a medium sized steaming pot, bring 2 cups of water boil. Place Langostino tails in steamer, cover and steam for 5 minutes if thawed, or 10 minutes if frozen.  While your tails are steaming, heat up a medium sized skilled with 2 tbsp of organic virgin olive oil and add the sliced mushrooms, premium walnuts, and onion. Saute over medium high heat. Once the onions start to caramelize, it should be time to add the tails. Add the steamed tails to your skillet, along with the 2 tbsp of granulated garlic. Stir and simmer while you prepare the eggs for your omelette. Beat eggs in medium bowl until the batter is a consistent yellow. Cook your omelette, add 3/4 of your cheese and fill your omelette with the sauteed medley. Top with the remaining cheddar. Enjoy!
